Chugchucaras

Chugchucaras is the local delicacy of Latacunga, Ecuador, and the surrounding area. Chugchucaras consists of deep fried pork, mote, potatoes, fried plantains, empanadas, and pork rinds. It is accompanied by aji, a spicy sauce made with hot peppers, tomatoes, cilantro, and onions.
