Kashk, qurut, chortan, aaruul is a range of dairy products used in cuisines of Iranian, Kurdish, Turkish, Mongolian, Central Asian, Transcaucasian, and the Levantine peoples. Kashk is made from drained yogurt or drained sour milk by forming it and letting it dry.
